Salsa Verde: Italian Herb, Caper, Pinenut and Garlic Sauce

This bright green Italian sauce is slightly chunky or smooth, and made with parsley, anchovies, capers, pine nuts, garlic, and olive oil. Variations of salsa verde contain mint or cilantro, and are delicious as a sauce or spread with seafood, poultry or meats, eggs, and vegetables. Find the recipe and printable recipe PDF below!

Yield: 3 cups


Method

1. Combine all ingredients.

Note: You may want to add just part of the vinegar and add the remaining to taste because they vary so much in acidity. For a slightly milder sauce, use lemon juice instead of vinegar.

Ingredients

1   cup Parsley, finely chopped

¼ cup Capers, rinsed and coarsely chopped

4 - 6 Tbsp.White onion, finely chopped

1 ea. Garlic cloves, finely chopped

2 Tbsp. Anchovy, finely chopped

1/3 cup Red wine vinegar, or lemon juice

1 cup Extra-virgin olive oil

1 tsp. Salt 

¼ tsp. Ground black pepper
